I absolutely LOVE cake mix recipes for they can quickly and easily be used to create desserts which taste as if they were made from scratch.  With all of the daily hustle and bustle, baking from scratch is a luxury I rarely have time for.

That's why I'm glad that there are some fabulous cookbooks available which use cake mix recipes instead.  If you haven't tried this type of baking yet, I highly recommend it and your taste buds won't be able to tell the difference.  All you need to add is flavorful ingredients, such as eggs, sour cream, butter, chocolate or fruit, for the distinctive "homemade" taste no bakery cake can match.

Chocolate Candy Cane Cake

This holiday cake is simple to make but very festive.

Servings: 12 to 16

Ingredients:

  • (1) package devil's food cake mix
  • (3) eggs
  • 1 1/3 cups milk
  • (1) cup mayonnaise
  • (1) tsp peppermint extract
  • (1) container ready-to-serve buttercream frosting
  • 1/4 cup crushed candy canes
  • Whole small candy canes for decoration

Directions:

  • 1.  Preheat oven to 350 degrees Fahrenheit
  • 2.  In a large mixer bowl, combine cake mix, eggs, milk, mayonnaise and peppermint extract.  Beat on medium speed for 2 minutes.  Spread batter evenly in greased 9" x 13" cake pan.  Bake for 35 to 40 minutes or until tester inserted in center comes out clean.  Cool completely in pan on a wire rack.
  • 3.  Stir crushed candy canes into frosting.  Spread frosting over top of cake.  Decorate with whole candy canes.

Variation:  Replace candy canes with hard mint candies to enjoy this cake year-round.

Tip: Crush leftover candy canes and stir into vanilla ice cream.

  • I think we like to bake to much in my house. We have a Duncan Hines cake cookbook is this there new edition?
