Country Crock Healthy HolidayIt's truly amazing what a dollop of Country Crock can do!  I'm not a veggie lover...as a matter of fact, I'm pretty much the exact opposite.  BUT, when I sprinkle a little salt and pepper on my veggies coupled with a bit of Country Crock, suddenly those borderline veggies taste MUCH better...and remember, this is coming from a perpetual "veggie-phobe".  Couple the fresh taste of Country Crock butter with fresh vegetables and watch even the pickiest eaters gobble them up without complaint.

What's more, I can feel good about adding Country Crock to our holiday veggie dishes for it has 70% less saturated fat and 30% fewer calories than butter.  It's a terrific way to add that buttery richness and flavor to a healthy dish without compromising the healthiness of what you're eating.  Of course, speaking as someone who is always watching their waistline, I appreciate anything that works WITH me and not AGAINST me!

Garlic Mashed Potatoes & Cauliflower

Garlic Mashed Potatoes & Cauliflower Recipe

PREP TIME: 10 minutes

COOK TIME: 25 minutes

Ingredients:

  • 2 medium Yukon gold potatoes, peeled and cubed
  • 3 cups cauliflower florets
  • 2 cloves garlic
  • 1/3 cup 2% milk
  • 3 Tbsp. Country Crock® Spread
  • 1/8 tsp. salt
  • 1/8 tsp. coarsely ground black pepper
  • 2 Tbsp. chopped flat-leaf parsley

Directions:

  1. Cover potatoes, cauliflower and garlic with water in 3-quart saucepan. Bring to a boil over high heat.
  2. Reduce heat to low and simmer uncovered until vegetables are very tender, about 15 minutes; drain.
  3. Return vegetables to saucepan; mash. Stir in remaining ingredients.
