My family frequently cooks with Extra Virgin Olive Oil because it is a healthier alternative to most cooking oils and lends a delicate flavor to any meal we prepare with it. Carapelli Olive Oil, Italy's number one Extra Virgin Olive Oil, is a brand that I've used for years for they have three exclusive blends of the best oils from the finest Mediterranean olive groves.
I've since learned two extremely interesting things about Carapelli Olive Oil and olive oil in general. First, Carapelli institutes a quality certification program that meets and exceeds the extensive, strict quality specifications required in Europe and the United States. Second, olive oil can actually be taste tested in much the same way as wine, coffee or bourbon.
Interested in putting your olive oil to the taste test, just like the master testers in Italy? Just follow these four simple steps:
- Swirl - By swirling the olive oil in your small blue glass, you release the oil's esters, which are molecules that contain the aroma.
- Sniff - Now inhale deeply. The aroma is the key to the fruitiness of the oil. Is it intense or is it more subtle?
- Slurp - Sip the oil while "sipping" in a bit of air. This slurping action emulsifies the oil and helps spread it throughout your mouth. Take note of the various tastes and sensations. Is it fruity, peppery , smooth?
- Swallow - Once you swallow the oil, it should leave your mouth with no aftertaste. Again, take note of any peppery or stinging sensation in your throat.
When I performed the four S's taste test on the sample of Carapelli Olive Oil that I received, I noticed several complex notes with absolutely no aftertaste. Unfortunately, my allergies have been working overtime and so my sniffer is on the fritz.
