Hellmann'sI'm a frugal gal and do everything in my power to make practical decisions which stretch my family's budget to the max.  Clipping coupons, shopping off-season and taking advantage of sales always lowers our bills, but the decisions I make as to what dishes to serve my family are just as important, if not more so, in keeping our family's food budget in line.

Thankfully, Hellmann's has created the Chicken Change-Up event featuring celebrity Chef Tim Love.  The recipes featured will help us all take charge of our family dinners and serve quick, easy and budget-conscious dishes that the whole family will clamor over.  Keep reading to learn more and find out why I chose to serve the Tuscan Glazed Chicken to my clan!

Hellmann's Tuscan Glazed Chicken Recipe

I was extremely happy with the large selection of quick and easy recipes available on Hellmann's Facebook page.  The hardest part was trying to narrow it down to just a few and then to finally choose just one to serve for dinner tonight.  What really helped me the most was the wonderful "cost per recipe and cost per serving" feature located at the bottom of each recipe.  With this valuable information, I could easily decide which dish would fit well with my family's food budget.

In the end, I decided to prepare the Tuscan Glazed Chicken.  This yummy Chicken Change-Up cost only $10.78 and served 6, which breaks down to $1.79 per serving.  The costs for all of the Hellmann's Chicken Change-Up recipes are based on the U.S. average retail prices at national supermarkets, so if you were able to find any of these ingredients on sale or had a coupon or two, your actual cost would be much lower.

Tuscan Glazed Chicken Recipe

INGREDIENTS

  • 1/3 cup Hellmann's® or Best Foods® Real Mayonnaise
  • 3 Tbsp. finely chopped roasted red pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. dried Italian seasoning
  • 1 tsp. balsamic vinegar
  • 6 boneless, skinless chicken breast halves (about 2 lbs.)
INSTRUCTIONS
  1. Preheat oven to 425°.
  2. Combine all ingredients except chicken in medium bowl. Arrange chicken on baking sheet, then evenly top with mayonnaise mixture.
  3. Bake 20 minutes or until chicken is thoroughly cooked.

Also terrific with Hellmann's or Best Foods Light Mayonnaise.

Hellmann's Chicken Change-Up Preparing this recipe was actually very simple and yet it filled the house with a wonderful aroma and looked as though I had been slaving over a hot stove for hours!  What's more, because Hellmann's was ingenious enough to direct you to cut the chicken breasts in half, cooking took only 20 minutes.  My family devoured the Tuscan Glazed Chicken and it made me feel good to know how cost-efficient this dish was too.  I highly recommend visiting the recipes section of Hellmann's Facebook page to find some great ways to make your family's tastebuds sing...for a dime!
