Hellmann's Chicken Change-Up Offers a Twist on a Classic Recipe ~ Parmesan-Crusted Bruschetta Chicken

Hellmann's We've all been there...it's time to cook dinner and you start to prepare the same old boring thing you fix every week.  :yawn:  Classic recipes are great and every home chef should have many of these go-to greats in their kitchen arsenal, but why fix the same ol' dish week after week, when you can zing up the traditional with a quick and easy twist?

Thankfully, Hellmann's has created the Chicken Change-Up event featuring celebrity Chef Tim Love.  The recipes featured will help us all take charge of our family dinners and serve quick, flavorful and budget-conscious dishes that the whole family will clamor over.  Keep reading to learn more about how Hellmann's helped me take a boring piece of chicken and transform it into one delectable meal!

Hellmann's Parmesan Crusted Bruschetta Chicken

I was extremely happy with the large selection of quick and easy recipes available on Hellmann's Facebook page.  The hardest part was trying to narrow it down to just a few and then to finally choose just one to serve for dinner tonight.  What really helped me the most was the wonderful "cost per recipe and cost per serving" feature located at the bottom of each recipe.  With this valuable information, I could easily decide which dish would fit well with my family's food budget.

In the end, I decided to try one that simply sounded too delicious to pass up... Parmesan-Crusted Bruschetta Chicken.  I always have a hard time incorporating a lot of vegetables into my meals which every member of my family will love, but thanks to the amazing topping of this particular recipe, everyone devoured the garden-ripe tomatoes and red onion with glee.

One of the things I loved about this recipe from Hellmann's was that it offered a bunch of flavor, yet was baked and not fried.  There was still plenty of crispy crunch too, thanks to coating the chicken in bread crumbs before baking. 

Parmesan-Crusted Bruschetta Chicken

Parmesan-Crusted Bruschetta ChickenINGREDIENTS:

  • 1/2 cup Hellmann's or Best Foods® Real Mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
  • 4 tsp. Italian seasoned dry bread crumbs
  • 2 medium tomatoes, seeded and chopped
  • 1/4 cup chopped red onion
  • 1/4 cup Wish-Bone Robusto Italian Dressing or Wish-Bone Italian Dressing
  • 1 Tbsp. chopped fresh basil leaves or 1 tsp. dried basil leaves, crushed

DIRECTIONS:

  1. Preheat oven to 425°.
  2. Combine Hellmann's or Best Foods Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
  3. Bake 20 minutes or until chicken is thoroughly cooked.
  4. Meanwhile, combine remaining ingredients in medium bowl.
  5. To serve, evenly top chicken with bruschetta mixture.
