Being born and raised here in Texas means that I basically cut my teeth on great Mexican food. It's so integrated into my life now that I can't imagine going any place where a fabulous enchilada, homemade tortilla or tamale wasn't available. Of course, it's impossible to think of amazing Mexican food without avocados! Texans like myself love avocados so much, we put them in and on everything! We even drink avocado margaritas around here!
Guacamole dip is my absolute favorite way to eat Avocados from Mexico and in my opinion, you haven't lived until you've tasted a smooth and creamy guacamole ranch dip! But one of the best ways to incorporate delicious avocados into an otherwise boring meal is to add them to a grilled chicken sandwich. Sliced avocado and pico de gallo on top of a succulent piece of grilled chicken is total heaven to my taste buds!
